TODAY'S RECIPE & NUTRITION TIP!  Baked Acorn Squash with Apple Stuffing from AllRecipes.Com. Keep this recipe in your back pocket for when the weather gets chilly! Makes a great side dish with a pork roast!

"Acorn squash is a small variety of winter squash named for its resemblance to a large acorn. Its firm, yellow-orange flesh has a mellow, sweet flavor that pairs well in dishes containing bacon, garlic, maple syrup or spices such as sage or nutmeg. The American Dietetic Association lists winter squash as one of the best sources of the antioxidant beta carotene. Acorn squash contains vitamin A, niacin, folate, thiamine and vitamin B-6, but it is an especially good source of vitamin C." ~ "Healthy Facts about Acorn Squash" from SFGate's Healthy Eating.

TODAY'S RECIPE & NUTRITION TIP! Enjoy Adrienne's Cucumber Salad courtesy of AllRecipes.com Labor Day Recipes! Find the ingredients for this recipe at the market!

"Cool as a Cucumber"...
Few foods are as cool as a cucumber. These low-calorie veggies contain many nutritional benefits, including hydrating properties and valuable nutrients.

Did you know that the aforementioned phrase came from the fact that in some cases the inner core of a cucumber is cooler (as much as 20 degrees) than its outside? Since cucumbers are more than 90 percent water, they contain no fat, almost no carbohydrates and very few calories, making them a popular diet-friendly snack. Learn more about cucumbers by reading  How Stuff Works' article, "Cucumbers: Natural Food." In addition, learn about the 7 Benefits of Eating Cucumbers by Clicking Here.

TODAY'S RECIPE & NUTRITION TIP! Sweet Corn Pudding from the Food Network's 33 Best Corn Recipes! When scraping the kernels away from the cob to use in their corn pudding, the Neelys reserve the milky runoff to later incorporate as a natural thickener, along with the milk, heavy cream and cheddar cheese.

According to VeryWellFit's Corn Nutrition Facts,  "Sweet corn, believe it or not, is actually a whole grain—it's a type of grass that is often referred to as a starchy vegetable because of its carbohydrate content. You will often hear whole corn is referred to as a vegetable, whereas ground corn is referred to as a grain.

Although corn contains carbohydrates, it is good for you. In fact, corn is rich in vitamin C, magnesium, B vitamins and carotenoids, such as lutein and zeaxanthin. Corn contains very little fat, less than 1 gram per serving (without toppings), and is a good source of
fiber, clocking in around 3 grams per half cup."
