TODAY'S RECIPE & NUTRITION TIP! Pickled Watermelon Rind from  Delish.com's 34 Surprising Recipes Using Watermelon!  Just like pickled carrots or pickled red onions, pickled watermelon rind is a delicious, crunchy addition to top salads, fried rice, a sandwich, or be enjoyed on its own. This recipe has a sweet soy pickling liquid, but don't let this stop you from experimenting with other brines—you can use any pickle brine recipe on this overlooked part of the watermelon. Find your watermelons at Five Points Farm Market & Greenhouse, have fun eating the inside flesh, then save the rind to pickle it!
Did you know? "Watermelon can help you reach an array of daily nutrient needs . . . Watermelon packs a punch when it comes to essential nutrients. It contains about 15% of your daily vitamin C, along with a wealth of other vitamins and minerals your body needs to optimal functioning, such as potassium and vitamins A and B6, Sollid says." Check out  this and other fun facts in Good Housekeeping's article, "13 Top Health Benefits of Watermelon, According to Nutritionists."

Be sure to visit all of our amazing farmers and producers as listed above, and cool your core with a Jessica's Snowball while you're at the Market this Wednesday!
