Strawberry and Spinach Salad with Honey Balsamic Vinaigrette from AllRecipes.com
"This strawberry spinach salad with balsamic is a great easy summer dish with many options for mixing and matching. Plus, the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix. Blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional, but pecans or roasted almonds add a little crunch and more protein!"

"What’s small, red, and packed with more vitamin C than an orange? Strawberries. You might not think much of the strawberries you blend into a smoothie or add to your morning oatmeal, but the small yet mighty fruit is loaded with health benefits." Learn more by reading the article,  9 Ways Strawberries Can Protect Your Heart, Brain, Immunity, and More, courtesy of Prevention.com.

TODAY'S RECIPE & NUTRITION TIP!  Pumpkin-Banana Bread French Toast from Food & Wine!  "This rich Pumpkin-Banana Bread French Toast is the flavor of fall on a plate. The pumpkin and banana in the bread are balanced by warm spices like cinnamon and nutmeg, which highlight the sweetness of the bread. For the best taste, use the ripest bananas you can find. After being dipped in the custard and cooked in butter, the bread slices get a crispy, toasty, and almost caramelized exterior that yields to a deliciously soft interior. Maple syrup, butter, and pepitas are the perfect finishing touch — the pepitas {pumpkin seeds} add some crunch and salt to balance the sweetness."

Did you know? According to the Farmer's Almanac's 16 Little Known Facts about Pumpkins, "the word ‘pumpkin’ comes from the Greek word, pepon, which means a “large melon.” Pumpkins originated in Central America. Pumpkins are actually a fruit. Many people think it should be our national fruit." Pumpkin seeds have great medicinal value!
"With 45 different varieties of pumpkins, ranging from squash to classic jack-o-lanterns, these vegetables allow for versatility in the kitchen. In addition to being tasty, pumpkins are also one of the top cancer-fighting foods individuals can add to their diet as they are packed with antioxidants and nutrients," says the National Foundation for Cancer Research in their article, Cancer Fighting Food: Pumpkin.
